Mom's Meatloaf
Mom's Meatloaf. A classic dinner recipe I feel everyone has had and added their own twist too. This recipe though is a simple recipe my grandma and mom made. Being on my elimination diet had made me look at food very differently. I am now constantly checking ingredients and making most everything from scratch.
This meatloaf is super simple and classic made with things you probably already have in your pantry! Something my mom always did was add a couple slices of old bread to the bottom of the pan to soak up the extra grease. This is a optional step if you are using a lean meat. Our family likes to add the ketchup topping, however that is a completely optional step if you'd like to skip!
We usually serve this meatloaf with a side of mashers and green beans or corn. It's usually whatever canned or fresh veggies we have on hand!
My husband is also a fan of this because we usually have plenty of leftovers for a meatloaf sandwich for lunch the next day!
Mom's Meatloaf
1.5 lb ground beef
2 eggs, beaten
1 8 oz can tomato sauce
1/2 cup panko or saltine cracker crumbs
1/4 cup finely chopped onion
1 tsp salt
1 tsp thyme
1 tsp black pepper
2 slices bread, optional
Optional: ketchup topping
3/4 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard
Preheat oven to 350°.
Combine all ingredients in medium mixing bowl. If using bread place in dish before meat mixture.
Shape mixture into a loaf baking dish. If using ketchup topping combine ingredients in small bowl and add to top of meatloaf after shaping into pan.
Bake at 350° for about 1 and 1/4 hours or until internal temperature reaches 160°. Let rest 5 to 10 minutes before slicing.
Makes 6 to 8 servings.
